I know, I know… All has been a little silent on the blog front as of late.
This isn’t for lack of effort, rather lack of time. I’ve been busy mixing up some new tea / beer collaborations that I’m super excited to announce in the next couple weeks.
Last weekend, our friends and neighbors over at Brix City Brewing in Little Ferry, NJ released an oak barrel-aged wild ale called Agony of Oak. Each barrel that was blended went through secondary fermentation for up to 2 years in a variety of different oak barrels, giving it a smooth yet complex flavor profile. The barrels were then blended with a special tea blend I made for them using our Peachy Oolong tea as well as some ginger root. Finally, the beer was bottle conditioned with Champagne yeast and allowed to re-ferment in the bottles for a month.
The wild ale itself has the characteristic acidic flavor you’d expect, which is perfectly balanced with the peach flavor, which then fades to the tannic Oolong tea undertone and is finished with just a hint of spice from the ginger, all brought together perfectly by the oaky smoothness. A truly unique flavor experience.
Not that you’d expect anything less from such skilled artisans! My hat’s off to all involved! I couldn’t be happier with the results.
For now, bottles of this newest collaboration are only available at the brewery itself, and while you’re there you can try it on draft as well!
