Tea Recipe: Chocolate Chai Pudding

My kids are growing fast, which means, of course, they are always hungry.  So when I get home every day, after doing my Tea Sommelier thing, am I greeted with hugs and kisses?  Of course not!  More like a cacophony of “when’s dinner going to be ready” and “I’m soooo hungry” and my favorite, “can I have a snack?”

Of course, I want them to eat (relatively) healthy and I want to instill my love of tea, so there are a couple recipes I keep in my back pocket for when they get a snack attack.

Here’s one of their favorites:


2/3 cup sugar
1/4 cup cocoa powder
3 tablespoons cornstarch
1/4 teaspoon salt
2-1/4 cups milk
2 teaspoons Kama Chai Sutra
2 tablespoons butter
1 teaspoon vanilla extract
mini marshmallows, for garnish

Stir together sugar, cocoa, cornstarch and salt in medium saucepan. Gradually stir in milk.

Cook over medium heat, stirring constantly, until mixture boils. Boil and stir 1 minute. Remove from heat, add loose tea and allow to steep for 7 minutes, then strain. Stir in butter and vanilla. Pour into individual dessert dishes. To avoid a skin from forming on top, press plastic wrap directly onto surface; serve warm or refrigerate at least 2 hours. Top with mini marshmallows, if desired.
